HOMEMADE GINGER GARLIC PASTE

Ginger and Garlic are the most common ingredients used in day to day Indian cooking. There are dishes we use garlic or ginger alone, both in some dishes as fresh chopped pieces. But lot of gravy dishes calls for Ginger garlic as paste, so that the flavor of ginger and garlic will blend nicely in the dish.
You can get this Ginger Garlic Paste in local stores in different brands but we all  know anything which is prepared in home with well known ingredients are far more better  than store-bought.
In beginning days I use to grind ginger and garlic whenever I needed. But after that I realized if we have ginger garlic paste in hand, we can prepare the dishes little faster. So nowadays I am preparing Ginger Garlic paste and storing it in refrigerator and it lasts more than a month. So here comes the recipe for Ginger garlic paste.

Ingredients
Garlic 1 cup
Ginger 1 cup (chopped)
Oil 1 tblsp
Salt 1 tblsp

Instructions

1) In a pan/tawa add salt and dry roast it until the color the changes to light brown.Keep it aside.

2) Add garlic, ginger, roasted salt and a tblsp of oil in a food processor and grind it until the paste consistency.

3) Transfer it to a air tight jar and store it in a refrigerator.

Notes
If you simply grind the ginger and garlic without adding oil and salt, the paste color changes to green color in one or two days.
