COCONUT RICE / THENGAI SADAM / ONE POT MEAL / LUNCH BOX RECIPE

Coconut Rice is one of the south indian traditional rice recipe. A very simple recipe yet a very tasty and delicious dish, also making use of  freshly grated coconut makes the dish flavorful. In my mom's place we have coconut trees and always have minimum 10 to 20 coconuts in home  and so it is not a big deal to prepare dishes with coconut. My mom often prepares coconut rice, mostly with afternoon's leftover rice for dinner and it is one of my favorite dish . Here in sweden we are rarely getting fresh coconut :( and not able to make chutney's and coconut related dishes often. But for past few weeks we are getting plenty of coconuts in stores that too for offer price :).Now I am happily preparing dishes with coconut. And so today posting recipe for my favorite dish Coconut Rice.







Ingredients


Coconut 1 Cup (Grated)
Cooked Rice 2 Cup
Oil 2 to 3 tblsp
Salt As per taste
Mustard Seeds 1 tsp
Bengal Gram/Channa Dhal 1 tsp
Urad Dhal 1 tsp
Cashew Nuts As needed
Ground Nuts As needed
Green Chilies 4 to 5 nos
Curry Leaves A Bunch
Ginger (Optional) 1 inch (Chopped)

Instructions
1) Heat oil in a pan , add mustard seeds once it splutters, add all nuts once it turns to golden brown color, add curry leaves, then add ginger and green chilies.Saute it well for few seconds.

2) Add grated coconut, saute well for 2 to 3 minutes and add salt for taste.

3) Transfer it to a bowl which has cooked rice, mix well and check for salt.



4) Transfer the rice to serving bowl.
